Directions:

  1. Line Pan: Line an 8-inch pan with aluminum foil, leaving a couple of inches overhanging on each side.
  2. Mix Nuts: Drizzle melted coconut oil in a large bowl, coating the bowl to make it greasy. Add almonds, peanuts, walnuts, puffed rice, and flaxseed meal, mixing well. Set aside.
  3. Make Syrup Mixture: In a small saucepan, combine brown rice syrup, honey, vanilla, and sea salt. Bring to a boil, whisking continuously for 3 to 4 minutes until the mixture thickens and becomes sticky.
  4. Combine and Press: Pour the syrup mixture immediately over the nut mixture and stir to coat thoroughly. Transfer to the lined pan, pressing the mixture evenly with a spatula to avoid gaps.
  5. Cool and Slice: Let the mixture cool in the pan for about 30 minutes. Using the foil overhang, lift the mixture from the pan, place it on a cutting board, and slice it into 10 bars. Let the bars cool completely before adding chocolate drizzle.
  6. Chocolate Drizzle: Place dark chocolate chips in a microwave-safe bowl and microwave in 30-second intervals, stirring until melted. Drizzle over the bars.
