Directions:

  1. Melt Ingredients: In a medium saucepan, melt the coconut oil over low heat. Add the peanut butter, honey, and vanilla, whisking continually until the mixture is smooth and fully combined.
  2. Combine: Remove from heat and stir in the rice cereal, oats, and flaxseed meal until well mixed.
  3. Shape Balls: With slightly wet hands, shape the mixture into balls, using about 1/4 cup for each. Place the balls on waxed paper. You should get about 18 cookies.
  4. Set: Let the balls sit for 15 to 20 minutes to firm up.
