Directions:

  1. Set Up Your Oven: Preheat the oven to 190°C (375°F).
  2. Sauté the Vegetables: In a large skillet, warm a drizzle of olive oil over medium heat. Add the onions and garlic, cooking for about 4 minutes until they’re softened and aromatic. Add the bell peppers, zucchini, broccoli, and sun-dried tomatoes, stirring for another 2 minutes. Set aside.
  3. Whisk the Eggs: In a large bowl, whisk together the eggs, milk, Parmesan, oregano, red pepper flakes, salt, and pepper until the mixture is light and frothy.
  4. Combine Ingredients in the Skillet: Pour the egg mixture over the veggies in the skillet, ensuring even coverage. Let it cook over medium heat for 5 to 6 minutes, just until the bottom starts to set.
  5. Bake to Finish: Place the skillet in the preheated oven and bake for 10 to 15 minutes, or until the edges turn golden and a knife inserted into the center comes out clean.
