Directions:

  1. Prepare the dressing: In a medium bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, basil, salt, and pepper until smooth and creamy. Store in the fridge until ready to use.
  2. Assemble the salad: Chop all the veggies, ensuring everything is roughly the same size, and place them in a large bowl.
  3. Dress and toss: Just before serving, drizzle the dressing over the salad and gently toss to coat. Season with additional herbs or cracked black pepper if desired.
