Directions:

  1. Preheat Oven: Preheat the oven to 180 °C (350 degrees F).
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking soda, cinnamon, and salt; set aside.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, maple syrup, Greek yogurt, milk, coconut oil, vanilla extract, and grated zucchini until fully combined.
  4. Combine Mixtures: Add the wet ingredients into the flour mixture and mix with a spatula until just combined, being careful not to over-mix.
  5. Fold in Chocolate Chips: Gently fold in the chocolate chips.
  6. Prepare Muffin Cups: Divide the batter evenly between 12 muffin cups sprayed with non-stick cooking spray (or use liners), making sure to fill each cup almost all the way full.
  7. Bake: Bake the muffins for 18 to 22 minutes, or until a toothpick inserted comes out clean. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
