Directions:

  1. Prepare the Chicken Mixture: Start by taking a large bowl and adding 3 cups of cooked chicken, shredded or diced. Toss in 2 stalks of chopped celery, 1 cup of halved red grapes, 1/2 cup of thinly sliced almonds, 3 green onions (sliced), and 2 tablespoons of finely chopped parsley. Mix everything together gently.
  2. Make the Dressing: In a separate bowl, combine 3/4 cup of Greek yogurt with 1 tablespoon of Dijon mustard and 3 tablespoons of fresh lemon juice. Add 1/2 teaspoon of celery seed and season with 1 teaspoon of salt and 1/2 teaspoon of cracked black pepper. Whisk until the mixture is smooth and well blended.
  3. Combine and Coat: Drizzle the dressing over the chicken mixture, then stir thoroughly to ensure all ingredients are evenly coated with the dressing.
  4. Chill Before Serving: Cover the bowl and place it in the refrigerator to chill until you're ready to eat. This salad is delightful served with crackers, on bread or wraps, or atop a bed of lettuce.
