Directions:

  1. Prepare the avocado mixture: In a large bowl, mash the avocado. Add Dijon mustard, Greek yogurt, and lemon juice, and mix until smooth and creamy.
  2. Add the vegetables and spices: Stir in the green onions, celery, paprika, salt, and pepper until well combined. Set aside.
  3. Chop the egg whites: Dice the egg whites and discard the yolks. Fold the egg whites into the avocado mixture, stirring gently until everything is evenly combined.
  4. Incorporate the turkey bacon: Add the chopped turkey bacon to the salad and mix.
  5. Serve and enjoy! Spoon the salad onto whole wheat bread with fresh arugula or enjoy it on its own.
