Directions:

  1. Prepare for Baking: Preheat oven to 350°F (175°C). Coat a 1-lb. loaf pan with cooking spray.
  2. Combine Dry Ingredients: In a bowl, combine flour, 2/3 cup sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In a second bowl, combine yogurt, eggs, melted butter, lemon zest, and vanilla.
  4. Toss Raspberries: In a third bowl, toss raspberries with the remaining 1 Tbsp. sugar.
  5. Combine Mixtures: Fold the yogurt mixture into the dry mixture, stirring to combine completely. Gently fold in the raspberries.
  6. Bake: Scrape the batter evenly into the prepared loaf pan. Bake until the top is golden and springs back when gently touched, about 60 minutes.
  7. Serve: Allow to cool slightly before serving warm. Enjoy!
