Directions:

  1. Sauté the Onion and Garlic: In a large saucepan over medium-high heat, heat olive oil and sauté the chopped onion for about 3 minutes, until translucent. Stir in the garlic and cook for an additional minute.  
  2. Add Tomatoes and Basil: Add the fire-roasted diced tomatoes and chopped basil, bringing the mixture to a boil. Stir in the cream cheese cubes, cooking until they melt into the mixture.  
  3. Blend the Soup: Carefully transfer the mixture to a blender or food processor and blend until smooth.  
  4. Finish and Serve: Return the soup to the saucepan and stir in the milk, salt, and pepper. Heat over medium-high heat for about 2 minutes, until warmed through. Serve with toasted bread or a sandwich, and enjoy!
